Deamination in its simplest terms means the removal of an amino or ammonium group. In reference to decomposition it refers to the liberation of ammonia when proteins break down. In living beings amino acids are also broken and their amino groups either transfered or liberated. The reaction scheme below shows the de-oxidative deamination of serine which is one of the few amino acids which can be directly deaminated in the body.
